所謂Trans Fat,是指一些加工了的菜油。原來,動物油,例如豬油、牛油,之所以會凝結,是因為其中的脂肪酸(Fatty Acid)都屬於一種不會與氧氣化合的飽和脂肪酸。植物油中的則是一類屬不飽和的脂肪酸。不飽和脂肪酸的分子式因其中氫原子的方位不同,可分為順式及反式的「鍵結」。天然的不飽和脂肪酸幾乎全部屬順式,在動物體內能代謝。人造的反式脂肪,耐高溫、不易變質(產生「益」味)、能存放更久;所以食品業者以植物油為原料,經部分氫化處理,造出反式脂肪。但這種油一旦進入人體,大都滯留其內,能增加罹患多種疾病的機率,包括心臟病、癌症、糖尿病、肝病、不育等。
比反式脂肪更不可思議的人工炸油,是寶潔(Procter & Gamble, P&G)在1968年發明的Olestra(商業名稱Olean)。這是一個蔗糖和脂肪酸的化合物,在1996年經FDA批准出售。不過由於很多人吃過Olestra炸的薯片後,都有肚瀉的徵狀,理由是腸內有太多油,所以這個人造炸油的銷路,一直差強人意。
在過去的五、六十年,化學工業創出了數之不盡的人造化合物,包括塑膠PVC(Poly Vinyl Chloride)、殺蟲劑DDT(Dichloro Diphenyl Trichloroethane)、的確涼(Dacron)的主要成分PET(Polyethylene Terephthalate)、防曬油的主要成分MBC(Methyl Benzylidine Camphor)、洗衣粉的主要成分NPE(Nonyl Phenol Ethoxylates)等。現在很多學者均提出有力證據,指出這些人造成分對人體有害,例如NPE分解後的NP,會引起乳腺細胞增生(Reprod. Biol. Endocrinol. Vol.4 pp.49-50)。下一次去買洗衣粉時,不妨試找一些不含NPE的牌子。
